Honing Steels are not Sharpening Steels.
We use a honing steel after each use of a knife in order to re-align the edge of the knife.
This helps preserve the edge and increases the time between knife sharpening.
It is important to ensure that the knife is honed at the correct angle ( in line with the manufacturers guidelines ) so that it maintains the edge and not remove the edge.
